Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the flour and salt.

  2. 2

    Cut in Butter

Add the unsalted butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Egg and Water

In a small bowl, beat the egg and add it to the flour mixture. Gradually mix in the cold water, one tablespoon at a time, until the dough comes together.

  4. 4

    Knead and Chill

Turn the dough onto a floured surface and knead gently for about 2-3 minutes. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook the Meat

In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.

  2. 6

    Add Ground Beef

Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

  3. 7

    Mix in Vegetables and Spices

Stir in the bell pepper, cumin, paprika, salt, and black pepper. Cook for an additional 3 minutes until the bell pepper softens.

  4. 8

    Combine with Eggs and Olives

Remove the skillet from heat, and stir in the chopped hard-boiled eggs and olives. Let the filling cool while you prepare the dough.

Assembly and Baking

  1. 9

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 10

    Roll Out Dough

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter or a bowl to cut out circles about 5-6 inches in diameter.

  3. 11

    Fill Empanadas

Place a spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges if desired.

  4. 12

    Prepare Egg Wash

In a small bowl, beat the egg with the water to create an egg wash. Brush the tops of the empanadas with the egg wash.

  5. 13

    Bake

Place the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown.

  6. 14

    Serve

Remove from the oven and let cool slightly before serving. Enjoy your delicious homemade empanadas!
