    Marinate the Goat Meat

    In a large bowl, combine the goat meat with curry powder, turmeric powder, cumin powder, salt, black pepper, and chili powder. Mix well to coat the meat evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

    Sauté Onions and Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Add Goat Meat

    Add the marinated goat meat to the pot. Brown the meat on all sides, about 5-7 minutes.

    Incorporate Tomatoes and Liquids

    Stir in the diced tomato, coconut milk, and water. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low, cover, and let the curry simmer for 1.5 to 2 hours or until the goat meat is tender. Stir occasionally and add more water if needed to prevent sticking.

Serving

    Once the goat meat is tender, remove from heat and stir in the chopped fresh cilantro. Serve the curried goat hot with rice or flatbreads.
