Preparing Plantains

    Peel the Plantains

    Using a sharp knife, cut off the ends of the ripe plantains. Make a lengthwise slit in the peel and carefully remove the skin. Cut the plantains into diagonal slices, about 1 inch thick.

    Heat the Oil

    In a large frying pan, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of plantain in; if it sizzles, the oil is ready.

    Fry the Plantains

    Carefully add the sliced plantains to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Making Garlic Sauce

    Prepare the Garlic

    Peel and finely mince the garlic cloves. You can use a garlic press for convenience.

    Mix the Sauce

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Adjust Seasoning

    Taste the garlic sauce and adjust seasoning as necessary, adding more salt or pepper to taste.
