Preparing the Steak

    Season the Steak

    Rub the flank steak with olive oil, minced garlic, salt, and black pepper. Make sure it's evenly coated.

    Sear the Steak

    In a skillet over medium-high heat, sear the seasoned flank steak for about 4-5 minutes on each side until it develops a nice crust. Remove from heat and let it rest.

Making the Creole Sauce

    Prepare the Vegetables

    Dice the red bell pepper, green bell pepper, onion, and tomatoes. Set aside.

    Cook the Sauce

    In the same skillet used for the steak, add a little more olive oil if necessary, and sauté the diced onions and peppers until soft, about 5 minutes.

    Add Tomatoes and Spices

    Add the diced tomatoes, cilantro, lime juice, water, cumin, paprika, oregano, salt, and black pepper. Stir well and let simmer for about 10 minutes.

Combining and Serving

    Slice the rested flank steak against the grain into thin strips.

    Place the sliced steak on a plate and pour the Creole sauce over it. Garnish with additional cilantro if desired.
