    In a fine-mesh strainer, rinse the long-grain rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    In a blender, combine garlic, onion, bell pepper, and cilantro to make the sofrito. Blend until smooth and set aside.

    In a large pot, heat 2 tablespoons of olive oil over medium heat.
