1. Rinse the Rice

In a fine-mesh strainer, rinse the long-grain rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

In a blender, combine garlic, onion, bell pepper, and cilantro to make the sofrito. Blend until smooth and set aside.

Stir in the adobo seasoning, oregano, and black pepper. Add the bay leaf for additional flavor.

6. Combine Rice and Broth

Add the rinsed rice to the pot and stir to coat. Pour in the chicken broth and bring the mixture to a boil.

7. Add Pigeon Peas

Once boiling, add the can of pigeon peas (drained and rinsed) to the pot. Stir to combine.

8. Simmer the Rice

Reduce heat to low, cover the pot, and let simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

9. Fluff and Serve

Remove the bay leaf and fluff the rice with a fork. Adjust salt to taste. Serve warm, garnished with chopped cilantro and lime wedges.
