Fritter Base

Method

Fritter Base Preparation

  1. 1

    Prepare the Bananas and Cassava

Peel the green bananas and cassava. Cut them into smaller pieces for easier processing.

  2. 2

    Cook the Cassava

Boil the cassava in water until tender, about 15-20 minutes. Drain and let it cool slightly.

  3. 3

    Process Ingredients

In a food processor, combine the boiled cassava, green bananas, garlic cloves, olive oil, salt, and black pepper. Add water as needed to achieve a smooth, pliable dough.

Filling Preparation

  1. 4

    Cook the Meat

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and bell pepper. Sauté until softened, about 5-7 minutes.

  2. 5

    Add Ground Meat

Add the ground meat to the skillet and cook until browned. Stir in adobo seasoning, cilantro, chicken broth, and a bay leaf. Cover and let simmer for about 15 minutes.

  3. 6

    Cool Filling

Remove from heat and let the filling cool before using it to fill the fritters.

Fritter Assembly and Cooking

  1. 7

    Assemble the Fritters

Take a portion of the fritter base and flatten it in your hand. Place a tablespoon of the meat filling in the center and fold the base over to form a patty. Seal the edges well.

  2. 8

    Heat Oil for Frying

In a deep pan, heat the vegetable oil over medium-high heat until hot.

  3. 9

    Fry the Fritters

Carefully place the filled fritters into the hot oil. Fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on a paper towel.

  4. 10

    Serve

Serve hot as a snack or appetizer, with your choice of dipping sauce.
