Prepare the Quinoa

Rinse the Quinoa
Place the quinoa in a fine-mesh strainer and rinse it under cold running water for about 1 minute to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let it sit covered for 5 minutes.
Prepare the Vegetables

Chop the Vegetables
While the quinoa is cooking, chop the bell peppers, zucchini, and halved cherry tomatoes into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped bell peppers and zucchini, and sauté for 5-7 minutes until slightly softened. Add the cherry tomatoes and cook for another 3 minutes.
Combine and Serve

In a large bowl, combine the cooked quinoa, sautéed vegetables, and drained chickpeas.

In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, salt, black pepper, and chopped basil.

Pour the dressing over the quinoa and vegetable mixture. Toss gently to combine all ingredients.
