Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) to ensure it is ready for baking.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs, then add milk, vegetable oil, and vanilla extract. Mix until fully blended.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

  5. 5

    Pour into Pan

Grease and flour a 9x13 inch baking pan. Pour the batter evenly into the prepared pan.

  6. 6

    Bake

Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Filling Preparation

  1. 7

    Prepare Cream Cheese Filling

In a medium bowl, beat the cream cheese until smooth. Gradually add powdered sugar, lemon juice, and lemon zest, mixing until well combined and creamy.

Assemble the Dish

  1. 8

    Cool the Base

Once the cake is baked, remove it from the oven and allow it to cool completely in the pan on a wire rack.

  2. 9

    Spread Filling

Once cooled, spread the cream cheese filling evenly over the top of the cake.

  3. 10

    Add Toppings

Scatter fresh berries over the cream cheese layer, and garnish with mint leaves.

Serve

  1. 11

    Slice and Serve

Cut the cake into squares and serve immediately, or refrigerate until ready to serve.
