    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, beat the eggs and gradually incorporate the flour from the edges until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Pasta Shaping

    Roll Out the Dough

    After resting, divide the dough into four equal pieces. Roll each piece out using a pasta machine or a rolling pin until thin (about 1/16 inch thick).

    Cut the Tagliolini

    Using a sharp knife or a pasta cutter, slice the rolled-out dough into thin strips (about 1/4 inch wide) to create tagliolini. Dust the cut pasta with flour to prevent sticking.

Sauce Preparation

    Make the Sauce

    In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Cream and Cheese

    Pour in the heavy cream and stir well. Bring to a gentle simmer, then add the grated Parmesan cheese, stirring until melted and smooth.

Cooking the Pasta

    Bring a large pot of salted water to a boil. Add the tagliolini and cook for about 2-3 minutes until al dente. Fresh pasta cooks quickly, so keep an eye on it!
