In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, beat the eggs and gradually incorporate the flour from the edges until a dough begins to form.

Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll Out the Dough
After resting, divide the dough into four equal pieces. Roll each piece out using a pasta machine or a rolling pin until thin (about 1/16 inch thick).

Cut the Tagliolini
Using a sharp knife or a pasta cutter, slice the rolled-out dough into thin strips (about 1/4 inch wide) to create tagliolini. Dust the cut pasta with flour to prevent sticking.

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
