Cooking the Pasta

Boil Water
Fill a large pot with water and bring it to a boil. Add a generous amount of salt to the water.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water for later use.

Drain Pasta
Drain the spaghetti in a colander and set aside.
Preparing the Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta and cook until it is crispy, about 5-7 minutes. Remove from heat and set aside.

Mix Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined.

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the cooked pancetta and toss to combine.

Adjust Consistency
If the sauce is too thick, add reserved pasta water a little at a time until you reach a creamy consistency.

Serve the carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
