Pasta Dough Preparation

    Mix the Flours

    In a large mixing bowl, combine the all-purpose flour and semolina flour. Mix well to ensure even distribution.

    Add Eggs and Oil

    Make a well in the center of the flour mixture. Crack the eggs into the well and add the olive oil and salt.

    Knead the Dough

    Using a fork, gradually incorporate the flour into the eggs until a dough begins to form. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.

Sauce Preparation

    Sauté Garlic

    In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

    Add the halved cherry tomatoes to the skillet. Cook for about 5-7 minutes until the tomatoes start to break down and release their juices.

Pasta Cooking and Serving
