Method

Preparation of the Bruschetta Base

  1. 1

    Slice and Toast the Baguette

Preheat your oven to 375°F (190°C). Slice the baguette into 1/2 inch thick pieces. Place the slices on a baking sheet and brush each side lightly with olive oil. Bake in the preheated oven for about 10-12 minutes, or until golden brown and crispy.

Preparing the Toppings

  1. 2

    Prepare the Apples and Greens

Core and slice the local apple into thin wedges. In a bowl, toss the radicchio and arugula together to mix.

  2. 3

    Assemble the Bruschetta

Once the baguette slices are toasted, layer the smoked salmon over each piece. Follow with a few slices of speck. Add a generous amount of the radicchio and arugula mixture on top.

  3. 4

    Add the Final Touches

Drizzle the balsamela crème fraîche over each bruschetta, then sprinkle with fresh dill, capers, and top with candied walnuts and pickled shallots for an extra crunch and flavor.
