Cooking Rice

    Rinse the Rice

    Rinse 2 cups of rice under cold running water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, add the rinsed rice, 4 cups of water, and 1 tsp of salt. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for about 18-20 minutes or until the rice is cooked and the water is absorbed.

    Fluff the Rice

    Once cooked, remove from heat and let it sit covered for 5 minutes. Then fluff with a fork.

Preparing the Vegetable Mix

    Sauté the Vegetables

    In a large skillet over medium heat, add a tablespoon of oil. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.

    Add Remaining Vegetables

    Add diced carrot, bell pepper, and peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

Finishing Touches

    Combine Rice and Vegetables

    Add the cooked rice to the skillet with the vegetables. Stir to combine well.

    Add Seasonings

    Drizzle 3 tablespoons of soy sauce and 1 tablespoon of sesame oil over the rice and vegetables. Also, add ground pepper and chili flakes. Stir everything together and cook for another 2-3 minutes.

    Garnish

    Remove from heat and garnish with chopped green onions before serving.
