Cooking Rice

    Rinse the Rice

    Place the rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a large pot, combine the rinsed rice and water. Bring to a boil over high heat. Once boiling, reduce to low heat, cover, and simmer for about 18 minutes, or until the rice is tender and water is absorbed.

Preparing the Vegetables

    Chop the Vegetables

    Finely chop the green onions and dice the carrots into small pieces. If using fresh peas, shell them.

Cooking the Dish

    Sauté the Vegetables

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add the carrots and peas, and stir-fry for about 5 minutes until they are tender.

    Add Cooked Rice

    Once the vegetables are tender, add the cooked rice to the skillet. Stir well to combine.

    Add Seasoning

    Pour soy sauce over the rice mixture, and add salt to taste. Stir continuously for about 3-5 minutes until everything is heated through.

    Add Optional Ingredients

    If using, push the rice mixture to one side of the skillet, crack the eggs into the empty side, and scramble them. Once cooked, mix them into the rice. If using cooked chicken, add it at this stage and stir well to combine.

    Finish with Green Onions

    Finally, stir in the chopped green onions and sesame oil for added flavor. Cook for another 2 minutes.
