Bruschetta Preparation

Prepare the Baguette
Preheat your oven to 375°F (190°C). Slice the French baguette into 1/2 inch thick slices. Brush both sides of each slice with olive oil and sprinkle lightly with salt. Place them on a baking sheet.

Toast the Baguette
Bake the baguette slices in the preheated oven for about 10-12 minutes, or until they are golden and crispy. Remove from the oven and set aside to cool.
Pickling the Beets

Cook the Beets
Place the beets in a pot and cover them with water. Bring to a boil and cook for about 30-40 minutes, or until they are tender. Allow them to cool slightly, then peel and slice thinly.

Make the Pickling Liquid
In a saucepan, combine 1 cup of water, 1 cup of apple cider vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt. Bring the mixture to a boil, stirring until the sugar dissolves.

Pickle the Beets
Place the sliced beets into a jar and pour the hot pickling liquid over them, ensuring they are fully submerged. Let them sit at room temperature for at least 1 hour, or refrigerate for a few hours to overnight for best results.

Assemble the Bruschetta
On each toasted baguette slice, spread a generous amount of truffle stracciatella. Top with a few slices of pickled beet.

Add Toppings
Sprinkle the chopped pistachios over the bruschetta, drizzle with balsamic reduction and truffle honey, and finish with a few leaves of watercress on top.

Arrange the bruschetta on a serving platter and serve immediately as an appetizer or snack.
