Method

Cooking the Pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.

    Once cooked, drain the pasta and set aside, reserving 1 cup of the pasta water.

Sautéing the Vegetables

    In a large skillet, heat the olive oil over medium heat.

    Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the bell pepper, zucchini, carrot, and broccoli to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender but still crisp.

    Stir in the cherry tomatoes and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.

Combining Ingredients

    Add the cooked pasta to the skillet with the vegetables.

    Pour in the reserved pasta water little by little until you reach your desired consistency.

    Season with salt, black pepper, and toss everything together until well combined.

    Remove from heat and stir in the grated Parmesan cheese and fresh basil.

Serving
