Method

Prepare the Eggplant

  1. 1

    Slice and Salt the Eggplant

Slice the eggplants into 1/4 inch thick rounds. Sprinkle each slice with salt and place in a colander to drain for about 30 minutes. This will help remove excess moisture and bitterness.

  2. 2

    Rinse and Dry

After 30 minutes, rinse the eggplant slices under cold water to remove the salt. Pat them dry with paper towels.

  3. 3

    Fry the Eggplant

Heat olive oil in a large skillet over medium heat. Fry the eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Make the Sauce

  1. 4

    Sauté Garlic

In the same skillet, add a bit more olive oil if needed and sauté minced garlic until fragrant, about 1 minute.

  2. 5

    Prepare the Tomato Sauce

Add the canned crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper to the skillet. Stir well and let simmer on low heat for about 15 minutes, allowing the flavors to meld.

Assemble the Dish

  1. 6

    Layer Ingredients

In a baking dish, spread a layer of the tomato sauce on the bottom. Layer half of the fried eggplant slices, followed by half of the mozzarella cheese. Add another layer of sauce, the remaining eggplant, and the remaining mozzarella cheese.

  2. 7

    Top with Parmesan

Finish by sprinkling the Parmesan cheese on top of the final layer of mozzarella.

Bake

  1. 8

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 9

    Bake the Eggplant Parmigiana

Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Serve

  1. 10

    Garnish and Serve

Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy!
