Prepare the Eggplant

Slice and Salt the Eggplant
Slice the eggplants into 1/4 inch thick rounds. Sprinkle each slice with salt and place in a colander to drain for about 30 minutes. This will help remove excess moisture and bitterness.

Rinse and Dry
After 30 minutes, rinse the eggplant slices under cold water to remove the salt. Pat them dry with paper towels.

Heat olive oil in a large skillet over medium heat. Fry the eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

In a baking dish, spread a layer of the tomato sauce on the bottom. Layer half of the fried eggplant slices, followed by half of the mozzarella cheese. Add another layer of sauce, the remaining eggplant, and the remaining mozzarella cheese.
