    Prepare the Calamari

    Clean and slice the calamari into rings if not pre-prepared. Rinse under cold water and pat dry with paper towels.

    Cook the Fregola Sarda

    In a pot, bring salted water to a boil. Add the fregola sarda and cook according to the package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.

    Prepare the Olives and Capers

    If the olives are whole, slice them into halves or quarters for easier eating. Measure out the capers and rinse them under cold water to remove excess salt.

Cooking the Dish

    Sauté the Calamari

    In a large skillet, heat the olive oil over medium-high heat. Add the calamari and sauté for about 2-3 minutes until they turn opaque. Do not overcook as they can become rubbery.

    Combine Ingredients

    Add the cooked fregola sarda, olives, capers, and Calabrian chili to the skillet with the calamari. Stir to combine everything evenly.

    Squeeze the juice of one lemon over the mixture, and add salt and black pepper to taste. Stir gently to mix the seasoning.
