For the Soup

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

    Add Garlic and Squash

    Stir in the minced garlic and cook for another minute, then add the butternut squash cubes. Stir to combine.

    Add Broth and Seasonings

    Pour in the vegetable broth, and add salt, black pepper, and nutmeg. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the squash is tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If using a regular blender, blend in batches and return to the pot.

For the Poached Pears

    Prepare the Poaching Liquid

    In a medium saucepan, combine water, sugar, vanilla extract, and lemon juice. Bring to a simmer over medium heat.

    Poach the Pears

    Add the pear halves to the simmering liquid and poach for about 15 minutes, or until tender. Remove from heat and let cool in the liquid.

To Serve

    Plate the Soup

    Ladle the butternut squash soup into bowls. Add a dollop of crème fraîche on top.

    Garnish with Pears and Pepitas

    Slice the poached pears and arrange them on top of the soup. Sprinkle with pepitas for added crunch.
