    Chop Vegetables

    Finely chop the onion, carrot, celery, and garlic cloves. Set aside.

Cooking Bolognese Sauce

    Brown the Meat

    In a large pot, heat the olive oil over medium heat. Add the ground beef and pork sausage, cooking until browned. Drain excess fat.

    Add Vegetables

    Add the chopped onion, carrot, celery, and garlic to the pot. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglaze with Wine

    Pour in the red wine and let it simmer for about 2-3 minutes, scraping the bottom of the pot to release any browned bits.

    Add Tomato and Stock

    Stir in the tomato passata and beef stock. Add the dried oregano and dried basil, stirring to combine.

    Simmer

    Bring the sauce to a gentle simmer. Reduce heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally.

    Taste the sauce and season with salt and black pepper as desired.
