Method
Preparation of Marinade
- 1
Make the Marinade
In a small bowl, combine olive oil, minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, black pepper, and balsamic vinegar. Mix well until combined.
Marinating the Beef
- 2
Marinate the Beef Tenderloin
Place the beef tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the beef, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
Cooking the Beef
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 4
Sear the Beef Tenderloin
In a large skillet over medium-high heat, add a little olive oil. Once hot, remove the beef from the marinade, allowing excess marinade to drip off, and sear the tenderloin on all sides for about 2-3 minutes per side until browned.
- 5
Roast in the Oven
Transfer the seared beef tenderloin to a roasting pan and place it in the preheated oven. Roast for approximately 25-30 minutes for medium-rare, or until a meat thermometer reads 135°F (57°C).
Serving
- 6
Rest and Slice
Remove the beef from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
- 7
Garnish and Serve
Slice the beef tenderloin into medallions, garnish with fresh parsley, and serve warm.
