Cooking the Polenta

Boil Water
In a large saucepan, bring 4 cups of water to a rolling boil.

Add Salt
Once the water is boiling, add 1 teaspoon of salt to the water.

Stir in Polenta
Slowly whisk in 1 cup of Anson Mills Polenta to prevent clumping. Continue to whisk until fully incorporated.

Cook Polenta
Reduce the heat to low and cover the saucepan. Cook the polenta for about 30-40 minutes, stirring frequently to prevent sticking, until it is thick and creamy.
Finishing the Polenta

Add Butter and Cheese
Once the polenta is fully cooked, remove from heat. Stir in 2 tablespoons of unsalted butter and 1 cup of grated Parmigiano-Reggiano cheese until melted and well combined.

Season and Serve
Season with black pepper to taste. Serve hot as a side dish or base for your favorite toppings.
