Method

Cooking Amaranth

    Rinse Amaranth

    In a fine mesh strainer, rinse 1 cup of amaranth grains under cold water until the water runs clear.

    Cook Amaranth

    In a medium saucepan, combine the rinsed amaranth, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

    Simmer Amaranth

    Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the water is absorbed and the grains are tender.

    Fluff Amaranth

    Remove from heat and let it sit covered for an additional 5 minutes. Then, fluff the amaranth with a fork.

Preparing Vegetable Mix

    Heat Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Aromatics

    Add 2 cloves of minced garlic and 1 chopped medium onion to the skillet. Sauté for 3-4 minutes until the onion is translucent.

    Add Vegetables

    Stir in 1 diced bell pepper, 1 diced zucchini, and 1 cup of halved cherry tomatoes. Cook for another 5-7 minutes until the vegetables are tender.

    Add 2 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with 1 tsp of black pepper.

Combining and Serving

    Combine Amaranth and Vegetables

    Once the amaranth is cooked and fluffed, add it to the skillet with the vegetable mix. Stir well to combine all the ingredients.

    Remove from heat and stir in 2 tablespoons of chopped fresh parsley and 1 tablespoon of lemon juice.
