    In a medium saucepan, heat the chicken or vegetable broth over medium heat until simmering. Keep it warm throughout the cooking process.

    In a large, heavy-bottomed pot, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes.

Cooking the Risotto

    Add the Acquerello rice to the pot with the shallots and stir well to coat the rice in the oil and butter. Toast the rice for about 2-3 minutes, stirring frequently until slightly translucent.

    Pour in the dry white wine and stir continuously until the wine is mostly absorbed by the rice.

    Begin adding the warm broth to the rice, one ladleful at a time. Stir gently and allow the rice to absorb the liquid before adding the next ladleful. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
