Trompo de Puerco Preparation

    Marinate the Pork

    In a bowl, combine minced garlic, oregano, cumin, chili powder, salt, black pepper, and orange juice. Add the pork shoulder and marinate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or oven to medium-high heat. Cook the marinated pork for about 20-25 minutes per side, or until internal temperature reaches 75°C (165°F). Let it rest, then slice thinly.

    Marinate the Beef

    In a bowl, mix minced garlic, oregano, cumin, chili powder, salt, black pepper, and lime juice. Add the flank steak and marinate for at least 2 hours, preferably overnight.

    Cook the Beef

    Preheat your grill or oven to medium-high heat. Cook the marinated beef for about 5-7 minutes per side, or until internal temperature reaches 63°C (145°F) for medium-rare. Let it rest, then slice thinly.

    Prepare the Tostadas

    Spread a layer of refried beans on each corn tostada.

    Add Meats

    Top the refried beans with slices of both the pork and beef.

    Add Cheese

    Sprinkle cheese over the meat and place under the broiler for 2-3 minutes until melted and bubbly.

    Garnish

    Top with thinly sliced red onion and fresh cilantro before serving.
