Method

For the Baked Potatoes

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C).

    Wash and Oil

    Scrub the russet potatoes under cold water. Pat them dry with a clean towel. Prick each potato several times with a fork. Rub each potato with olive oil and sprinkle with salt and black pepper.

    Bake

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the potato.

For the Carne Asada

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Place the flank steak in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour or overnight for best results.

    Cook the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the flank steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes per side for medium-rare, or until your desired doneness is reached.

    Rest and Slice

    Remove the steak from the grill and let it rest for 5 minutes. Slice the steak against the grain into thin strips.

For the Pickled Jalapeños

    Prepare the Pickling Liquid

    In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring occasionally until the sugar and salt dissolve.

    Pickle the Jalapeños

    Place the sliced jalapeños in a jar and pour the hot pickling liquid over them. Let it cool to room temperature and then refrigerate for at least 1 hour before serving.

For Serving

    Prepare to Serve

    Once the baked potatoes are ready, cut them open and fluff the insides with a fork. Top each potato with the sliced carne asada and serve with pickled jalapeños and saltine crackers on the side.
