Preparation of Meats

Marinate the Meats
In a bowl, combine the minced garlic, orange juice, lime juice, cumin, oregano, salt, and black pepper. Add the pork shoulder, beef flank steak, and pork belly, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.

Cook the Meats
Preheat your grill or skillet over medium-high heat. Remove the marinated meats from the refrigerator. Cook each type of meat separately until they are cooked through and have a nice char on the outside, about 5-7 minutes per side for the pork and beef. For the chicharron, heat it in a separate pan until crispy.

Prepare Tortillas
Warm the corn tortillas on a skillet for about 30 seconds on each side until pliable.

Slice the Meats
Once cooked, let the meats rest for a few minutes. Slice the pork shoulder and beef flank steak thinly.

Assemble Tacos
Take a warm tortilla and layer with a slice of each meat: pork shoulder, beef flank steak, pork belly, and a piece of chicharron. Top with chopped fresh cilantro and diced onion. Drizzle with salsa verde to taste.
