    Prepare the Cheese Crust

    In a non-stick skillet over medium heat, sprinkle a thin layer of shredded cheese evenly on the bottom of the skillet. Allow it to cook until it bubbles and turns golden brown.

    Add Tortillas

    Carefully place a tortilla on top of the melted cheese. Press down lightly to adhere and let it cook for another minute until the cheese is fully melted and forms a crust.

    Flip and Cook

    Using a spatula, flip the tortilla to allow the cheese crust side to be on top. Cook for an additional minute, then remove from the skillet. Repeat with the remaining tortillas.

    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Add the flank steak and marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Grill the Steak

    Preheat a grill or grill pan over high heat. Remove the steak from the marinade and grill for about 4-6 minutes on each side, or until it reaches your desired doneness.

    Rest and Slice

    Remove the steak from the grill and let it rest for 5 minutes. Slice it against the grain into thin strips.
