Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, black pepper, and chipotle powder. Mix well.

    Marinate the Pork

    Cut the pork shoulder into large chunks and add it to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Preheat the Grill

    Preheat your grill to medium-high heat, around 375°F (190°C).

    Skewer the Pork

    Once marinated, thread the pork pieces onto a skewer, packing them tightly together to form a compact trompo shape.

    Grill the Pork

    Brush the skewered pork with vegetable oil and place it on the grill. Cook for about 20-25 minutes, turning occasionally, until the pork is charred and cooked through (internal temperature should reach 145°F or 63°C).

    Rest the Meat

    Once cooked, remove the pork from the grill and let it rest for 10 minutes before slicing.

Serving

    Thinly slice the grilled pork and serve it on warm corn tortillas. Top with diced onion and chopped cilantro. Serve with lime wedges and salsa on the side.
