Meat

Method

Preparation of Meat

  1. 1

Cut the lamb and pork shoulder into large chunks, about 2 inches in size. This will help them marinate and cook evenly.

Marinade

  1. 2

In a large mixing bowl, combine minced garlic, cumin powder, dried oregano, paprika, chili powder, salt, black pepper, olive oil, and lime juice. Mix well until all ingredients are combined.

  2. 3

Add the chunks of lamb and pork to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours, preferably overnight.

Cooking

  1. 4

Preheat your grill or oven to medium-high heat (about 400°F or 200°C).

  2. 5

Thread the marinated meat onto skewers or place them on a grill rack. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  3. 6

Grill the meat for about 15-20 minutes, turning occasionally until the meat is cooked through and has a nice char on the outside.

Serving

  1. 7

Remove the meat from the grill and let it rest for a few minutes. Then, chop it into small pieces.

  2. 8

Warm the corn tortillas on the grill for about 1-2 minutes each side until soft.

  3. 9

Serve the chopped meat on tortillas with diced pineapple, chopped onion, cilantro, and a drizzle of salsa verde. Enjoy!
