Trompo de Res

Chicharrón

Tortillas

Garnishes (optional)

Method

Preparing the Trompo de Res

  1. 1

    Marinate the Beef

In a large bowl, combine minced garlic, chopped onion, orange juice, cumin, dried oregano, salt, black pepper, and vegetable oil. Mix well.

  2. 2

    Add Beef

Add the flank steak or sirloin to the marinade, ensuring it’s well coated. Cover and refrigerate for at least 2 hours or overnight for best results.

  3. 3

    Cook the Beef

Heat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 6-7 minutes on each side, or until cooked to your desired doneness. Let it rest before slicing thinly.

Preparing the Chicharrón

  1. 4

    Prepare the Pork Belly

Cut the pork belly into small chunks. Rub with salt and lemon juice.

  2. 5

    Fry the Pork Belly

In a deep pan, heat enough oil to submerge the pork. Once hot, add the pork belly and fry until golden brown and crispy, about 10-15 minutes. Drain on paper towels.

Assembling the Tacos

  1. 6

    Warm the Tortillas

In a skillet, warm the corn tortillas for about 30 seconds on each side until soft and pliable.

  2. 7

    Assemble the Tacos

Place a few slices of the cooked beef on each tortilla, top with crispy chicharrón, and add optional garnishes like cilantro, diced onion, lime wedges, and salsa verde.
