Marinating the Pork

    In a blender, combine the pineapple, dried guajillo peppers, dried ancho peppers, garlic cloves, white vinegar, cumin, oregano, salt, and black pepper. Blend until smooth.

    Place the pork shoulder in a large bowl or a resealable plastic bag. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and let any excess marinade drip off. Grill or roast the pork for about 20-25 minutes per side, or until the internal temperature reaches 75°C (165°F).
