Preparation of Suadero

Cook the Suadero
In a large pot, place the suadero with enough water to cover it. Bring to a boil, then reduce to a simmer. Cook for about 2 hours or until tender. Once cooked, remove from heat, let cool slightly, and shred into bite-sized pieces.
Making the Cheese Crust

Prepare the Cheese Crust
In a non-stick skillet over medium heat, add the queso Oaxaca. Allow it to melt and become golden brown, creating a crust. Once ready, carefully remove it from the skillet and set aside.
Preparing Avocado Salsa

Make the Salsa
In a blender, combine ripe avocados, chopped tomato, lime juice, chopped cilantro, and salt. Blend until smooth. Adjust seasoning if necessary.
