Marinate the Pork
In a large bowl, mix olive oil, minced garlic, cumin, paprika, black pepper, salt, and lime juice. Add the pork shoulder and coat well. Cover and refrigerate for at least 2 hours or overnight for best flavor.

Cook the Pork
Preheat your grill or oven to medium-high heat. Once hot, cook the marinated pork shoulder for about 25-30 minutes, turning occasionally, until the internal temperature reaches 75°C (165°F). Let it rest for 10 minutes before slicing thinly.

Warm the pita bread on the grill or in a pan for about 1-2 minutes until soft and pliable.

Lay the warmed pita bread flat on a plate. Place the sliced pork on top, followed by the shredded cheese and a generous amount of Arab salad. Serve with a side of French fries.
