In a large bowl, combine the minced garlic, ground cumin, ground paprika, black pepper, salt, olive oil, and lemon juice. Mix well to form a marinade.

Cut the pork shoulder into thin slices or cubes and add to the marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat a grill or a large skillet over medium-high heat. Add the marinated pork and cook for about 15-20 minutes, turning occasionally, until the pork is cooked through and has a nice char.

While the pork is cooking, warm the pita bread in a dry skillet or microwave until soft and pliable.

In a bowl, combine diced tomatoes, cucumbers, red onions, and chopped parsley. Toss well to mix.
