Method

Papas Fritas Preparation

  1. 1

    Prepare the Potatoes

Peel and cut the potatoes into thin strips. Rinse them in cold water and pat dry.

  2. 2

    Fry the Potatoes

In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, add the potato strips and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Carne Asada Preparation

  1. 3

    Marinate the Flank Steak

In a bowl, mix the olive oil, garlic powder, cumin, salt, and black pepper. Rub this mixture onto the flank steak and let it marinate for at least 30 minutes.

  2. 4

    Cook the Flank Steak

Preheat a grill or skillet over medium-high heat. Cook the flank steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest before slicing.

Salsa Enchilada Preparation

  1. 5

    Prepare the Salsa

In a blender, combine the tomatoes, onion, garlic cloves, chili powder, cumin, salt, and water. Blend until smooth.

  2. 6

    Cook the Salsa

Transfer the blended salsa to a saucepan and simmer over medium heat for 10 minutes, stirring occasionally.

Assembly

  1. 7

    Assemble the Dish

In a serving plate, layer the fried potatoes, sliced carne asada, and drizzle with the prepared salsa enchilada. Garnish with chopped green onions.
