Preparation of Potatoes

    Boil the Potatoes

    In a large pot, add enough water to cover the potatoes. Add 1 tsp of salt and bring to a boil. Once boiling, add the potatoes and cook for approximately 20-25 minutes or until they are fork-tender.

    Once the potatoes are cooked, drain them and let them cool slightly. Peel the potatoes while still warm, then slice them into halves or quarters, depending on your preference. Season with salt and black pepper to taste.

Cooking the Meats

    Prepare the Pork Trompo

    In a skillet or grill, cook the marinated pork trompo over medium heat. Ensure that it is cooked through and has a nice char. This should take about 10-15 minutes, turning occasionally.

    Prepare the Beef Trompo

    In the same skillet or grill, add the marinated beef trompo after the pork is done. Cook until the beef is browned and cooked through, approximately 10-15 minutes. Remove both meats from heat and let them rest for a few minutes before slicing.

    On a serving platter, arrange the sliced potatoes. Top with sliced pork and beef trompo. Serve with saltine crackers on the side and garnish with pickled jalapeños for added spice.
