Method

Prepare the Potatoes

    Boil the Potatoes

    In a large pot, fill with water and add 1 tsp of salt. Bring to a boil over medium-high heat. Add the potatoes and cook until they are tender, about 15-20 minutes.

    Drain and Cool

    Once the potatoes are cooked, drain the water and let them cool slightly. You can peel the potatoes if you prefer, but leaving the skin on adds flavor.

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Cut the potatoes in half and drizzle them with olive oil. Place them cut-side down on a baking sheet. Roast for 25-30 minutes until golden brown.

Prepare the Cheese

    Add Cheese

    Once the potatoes are roasted, remove from the oven and sprinkle the cheddar cheese generously on top of the hot potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Prepare the Pickled Jalapeños

    Make the Pickling Liquid

    In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar dissolves.

    Pickle the Jalapeños

    Place the sliced jalapeños in a jar and pour the hot pickling liquid over them. Let them cool to room temperature before sealing the jar and refrigerating. Allow them to pickle for at least 1 hour.

Serve the Dish

    Plate the Papa Asada

    Serve the roasted potatoes topped with melted cheddar cheese on a plate. Accompany with saltine crackers on the side.

    Add Pickled Jalapeños

    Top the potatoes with pickled jalapeños as a spicy garnish and serve immediately.
