Steeping the Hibiscus
In a medium pot, bring 4 cups of water to a boil. Once boiling, add 1 cup of dried hibiscus petals to the water.

Simmering
Reduce the heat and let the mixture simmer for about 15 minutes. This will extract the flavor and color from the hibiscus petals.

Straining
After simmering, remove the pot from heat and let it cool for a few minutes. Strain the mixture through a fine mesh strainer into a large pitcher to remove the hibiscus petals.

Sweetening
While the liquid is still warm, add 1 cup of sugar and stir until fully dissolved. This will create a sweet hibiscus concentrate.

Adding Lime Juice
Once the sugar has dissolved, add 2 tablespoons of lime juice to the mixture for a zesty flavor.

Chilling
Let the agua de Jamaica cool to room temperature, then refrigerate until chilled, about 1 hour.

To serve, fill a glass with ice cubes and pour the chilled agua de Jamaica over the ice until the glass is filled. Optionally, garnish with fresh mint leaves and lime slices.
