Beans Preparation

Soak the Beans
Place the pinto beans in a large bowl and cover them with water. Let them soak overnight or at least for 8 hours.

Cook the Beans
Drain the soaked beans and transfer them to a large pot. Add 4 cups of fresh water and 1 tsp of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender.

Mash the Beans
Once the beans are cooked, drain them, reserving about 1 cup of the cooking liquid. Using a potato masher or fork, mash the beans until smooth, adding some of the reserved liquid as needed to achieve your desired consistency.

Sauté the Aromatics
In a large skillet, heat 2 tablespoons of lard or vegetable oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

Add Cheese
Before serving, stir in 1 cup of grated cheddar cheese until melted and fully incorporated. Adjust seasoning with salt if needed.
