Method

Preparation

  1. 1

    Soak the Beans

Rinse the pinto beans under cold water and soak them in a large bowl with enough water to cover them overnight.

  2. 2

    Chop Ingredients

Dice the onion and mince the garlic cloves. Set aside.

  3. 3

    Cook Bacon and Chorizo

In a large pot, cook the bacon over medium heat until crispy. Add the chorizo and cook until browned. Remove excess grease if necessary.

Cooking

  1. 4

    Cook the Beans

Add the soaked pinto beans and water to the pot with the bacon and chorizo. Bring to a boil, then reduce the heat to a simmer.

  2. 5

    Add Aromatics

Add the diced onion and minced garlic to the pot. Stir to combine.

  3. 6

    Season the Beans

Add salt, black pepper, cumin, and chili powder to the pot. Stir well and let simmer for about 1.5 to 2 hours, or until the beans are tender.

  4. 7

    Adjust Consistency

If the beans are too thick, add a bit more water until you reach your desired consistency.

  5. 8

    Finish with Lime Juice

Stir in the lime juice just before serving for a fresh flavor.

Serving

  1. 9

    Garnish and Serve

Ladle the frijoles puercos into bowls, and top with fresh cilantro and chopped onion. Serve warm.
