Preparation of the Meat

Marinate the Arrachera
In a large bowl, combine olive oil, garlic powder, cumin, salt, black pepper, and lime juice. Mix well to create a marinade. Add the arrachera and coat it thoroughly. Cover and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).

Grill the Meat
Preheat a grill or grill pan over medium-high heat. Remove the arrachera from the marinade and place it on the hot grill. Cook for about 5-7 minutes on each side, or until desired doneness is achieved. Use a meat thermometer for accuracy (130°F for medium-rare, 140°F for medium).

Rest the Meat
Once cooked, remove the arrachera from the grill and let it rest for about 5 minutes. This allows the juices to redistribute within the meat.

While the meat is resting, warm the flour tortillas on the grill for about 30 seconds on each side until they are pliable.
