Method

Preparing the Pork

  1. 1

    Season the Pork

In a bowl, mix together garlic powder, ground cumin, paprika, salt, and black pepper. Rub this seasoning mixture all over the pork shoulder.

  2. 2

    Cook the Pork

In a skillet over medium heat, add a little oil and sear the seasoned pork shoulder on all sides until browned (about 5-7 minutes).

  3. 3

    Slow Cook

Reduce the heat to low, cover the skillet, and let the pork cook for about 1.5 to 2 hours, turning occasionally until it is tender and can be shredded easily.

  4. 4

    Shred the Pork

Once cooked, remove the pork from the skillet, let it rest for a few minutes, then shred it using two forks.

Assembly

  1. 5

    Prepare the Tortilla

Warm the flour tortilla in a pan or microwave until soft and pliable.

  2. 6

    Add the Ingredients

On the warm tortilla, layer the shredded pork, diced pineapple, crumbled queso fresco, and jocoque.

  3. 7

    Finish with Lime

Drizzle lime juice over the top for added flavor.

  4. 8

    Serve

Fold the tortilla over the fillings, cut in half if desired, and serve immediately while warm.
