Preparation of Lamb

    Marinate the Lamb

    In a bowl, combine the sliced lamb with garlic powder, cumin, paprika, salt, and black pepper. Mix well to coat the lamb evenly with the spices. Allow to marinate for at least 30 minutes.

    Cook the Lamb

    Heat a skillet over medium-high heat. Add the marinated lamb slices and cook for about 5-7 minutes or until the meat is cooked through and slightly crispy on the edges. Remove from heat.

Assemble the Cachetada

    Warm the Tortilla

    In a separate skillet or on a griddle, warm the flour tortilla for about 30 seconds on each side until pliable.

    Layer the Ingredients

    On the warm tortilla, layer the cooked lamb slices, sprinkle the shredded Oaxaca cheese on top of the meat, and add jocoque (or sour cream) evenly over the cheese.

    Fold and Serve

    Fold the tortilla in half to create a pocket with the filling inside. Optionally garnish with chopped cilantro and serve with lime wedges on the side.
