    Marinate the Beef

    In a bowl, combine soy sauce, calamansi juice, minced garlic, and black pepper. Add the beef sirloin and ensure it's well coated. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerator.

    Prepare the Onions

    Slice the large onion into thin rings. Set aside for later use in cooking.

    Searing the Beef

    In a skillet, heat the vegetable oil over medium-high heat. Once hot, add the marinated beef slices (reserve the marinade) and sear for about 2-3 minutes on each side until browned. Remove the beef from the skillet and set aside.

    Cooking the Onions

    In the same skillet, add the sliced onions and sauté until they are translucent and slightly caramelized, about 5 minutes.

    Combine and Simmer

    Return the beef to the skillet with the sautéed onions. Pour the reserved marinade over the beef and onions. Let it simmer for 5-7 minutes until the beef is cooked through and the flavors meld together.

Serving

    Plate the Dish

    Transfer the Bistek to a serving platter. Optionally, top with sliced green onions and a fried egg on each serving.
