Prepare the Ingredients
Season the bistek with salt and black pepper on both sides. Slice the onion into thin rings.

Cook the Onion
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 8-10 minutes. Remove from the skillet and set aside.

Cook the Bistek
In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high and add the seasoned bistek. Cook for about 4-5 minutes on each side, or until cooked to your desired doneness. Remove from the skillet and let it rest for a few minutes.

Prepare the Tortillas
Warm the corn tortillas in the skillet for about a minute on each side until pliable.

Assemble the Bistec Encebollado
On each tortilla, place a piece of bistek. Top with the caramelized onions and sprinkle shredded cheese on top.

Return the assembled tortillas to the skillet, cover with a lid, and cook on low heat for about 2-3 minutes, or until the cheese is melted and bubbly.
