Method

Prepare the Pork

  1. 1

    Marinate the Pork

In a bowl, combine lime juice, minced garlic, cumin, paprika, salt, and black pepper. Add the pork shoulder and coat well. Marinate for at least 1 hour, preferably overnight.

  2. 2

    Cook the Pork

Preheat your grill or a skillet over medium-high heat. Cook the marinated pork for about 20-25 minutes, turning occasionally until fully cooked and slightly charred on the outside. Let it rest for 5 minutes before slicing it thinly.

Prepare the Salad

  1. 3

    Mix Salad Ingredients

In a mixing bowl, combine diced cucumber, diced tomato, thinly sliced red onion, chopped parsley, olive oil, and lemon juice. Season with salt and pepper to taste. Toss well to combine.

Prepare the Fries

  1. 4

    Fry the Potatoes

Heat oil in a deep pan or fryer to 180°C (350°F). Fry the sliced potatoes until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Assemble the Dish

  1. 5

    Build the Trompo

Take the pita bread and layer the sliced pork on top. Add crumbled feta cheese and a generous serving of the prepared salad. Serve alongside the crispy fries.
