Method

Preparing the Trompo de Res

    Marinate the Beef

    In a bowl, mix the minced garlic, cumin, paprika, oregano, salt, black pepper, and olive oil. Add the beef sirloin and coat it evenly. Let it marinate for at least 30 minutes.

    Cook the Beef

    Preheat a grill or skillet over medium-high heat. Cook the marinated beef for about 8-10 minutes on each side, or until cooked to your desired doneness. Remove from heat and let it rest for a few minutes before slicing it thinly.

Preparing the Ensalada Árabe

    Chop the Vegetables

    Dice the cucumber, tomato, and red onion into small pieces and combine them in a bowl.

    Dress the Salad

    Add lemon juice, olive oil, salt, and black pepper to the chopped vegetables. Toss well to combine.

Preparing the Papas Fritas

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips. Rinse in cold water and pat dry with a paper towel.

    In a deep pan, heat the oil over medium heat. Once hot, add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt to taste.

    Take the pita bread and fill it with the sliced beef, ensalada árabe, and crumbled feta cheese. Serve with fried potatoes on the side.
