    Make the Dough

    On a clean surface, mound the flour and create a well in the center. Add the eggs, salt, and olive oil into the well. Using a fork, whisk the eggs gently, gradually incorporating the flour from the edges of the well until a shaggy dough forms.

    Knead the Dough

    Bring the dough together with your hands and knead for about 8-10 minutes until the dough is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    Roll Out the Pasta

    After resting, divide the dough into quarters. Roll out each piece with a pasta machine or a rolling pin until thin. Dust with flour to prevent sticking.

    Cut the Pasta

    Cut the rolled-out dough into your desired shape (e.g., fettuccine, tagliatelle, or lasagna sheets). Dust with flour to keep the pieces separate.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 2-4 minutes until al dente. Drain and serve with your favorite sauce.
