For the churros

    Prepare the dough

    In a medium saucepan, combine water, vegetable oil, sugar, and salt. Bring to a boil over medium heat. Remove from heat and stir in flour until a dough forms. Let cool slightly before adding eggs, one at a time, until fully incorporated.

    Heat the oil

    In a deep skillet or fryer, heat 4 cups of vegetable oil to 375°F (190°C).

    Pipe and fry churros

    Transfer the dough to a pastry bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting with scissors. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Coat with sugar

    In a shallow dish, mix granulated sugar and cinnamon. Roll fried churros in the mixture while still warm.

    In a small saucepan over medium heat, heat the heavy cream until it just begins to simmer. Remove from heat and add chocolate chips, stirring until they melt and the sauce is smooth. Stir in vanilla extract.
